Broccoli Slaw

2 heads of broccoli and some of their stalks
1/2 c. toasted almond slivers
1/3 c. dried cherries or cranberries
1 shallot
1/2 c. buttermilk
1/3 c. mayonnaise
2 TBSP cider vinegar (or any really light vinegar that you enjoy)
1 TBSP sugar/agave, optional
Using a food processor with a thin slicing blade, slice the broccoli and the shallot, or using a knife and some patience cut the broccoli florets into small bite sized pieces and the stalk and shallot into very thin rounds; add into a bowl with the dried fruit. If your nuts aren’t toasted, toast them in a pan on medium low heat until fragrant, be careful not to burn! Add them to the bowl as well. In a separate bowl combine the buttermilk, mayonnaise, vinegar and sugar/agave if using- whisk until smooth.  Pour half of dressing into the bowl containing the broccoli, shallot, fruit, nuts, stir until completely incorporated. Taste and adjust dressing amount. Serve immediately or place in fridge for later!
