Daikon Radish Roast

1 medium daikon radish
2 tomatoes
1 bell pepper
1 onion (red or yellow)
8 pieces of garlic, partially smashed or whole
zest of orange
Cut the vegetables in bite sized pieces and toss lightly with olive oil (roughly 3 TBSP, give or take) and the garlic cloves. Spread in a thin layer on a baking sheet. Season with salt and pepper, and the zest of one orange. Bake in the oven at 400 degrees for 30-45 minutes, or until the onions are caramelized and the other veggies are crisp and golden in some places.

*Daikon radishes tend to be a little bit bitter, roasting it is a great way to cut the bitterness and add some yummy flavors. If you’re concerned about it still be a little too bitter, toss the Daikon radish separately with some oil and 2 TBSP of sugar before adding it to the sheet with the other veggies to bake.
