I’ve always been a little skeptical of the green bean. I never understood the following- they’re so..blah to me. But green beans are in season in South Florida, and are part of my September seasonal produce list that the Fruitful Fields provided me. And here comes the challenge… How was I going to create/find a good green bean recipe? I’ve sauteed them- nope, doesn’t do it for me. I’m steamed them- eh. But behold the oven! I had yet to bake them. And wah-la, a miracle! These green beans are good! I mean, really good.
1/2 lb green beans, washed and cleaned
1/2 cup bread crumbs
1/2 cup flour
Pinch of red pepper flakes and garlic powder
Preheat the oven to 400 degrees. Coat each green bean in the whisked eggs, then dip it into the flour, and then lastly into the bread crumbs mixed with the red pepper flakes and garlic powder. Line them on a sprayed baking sheet and bake in the over for 15-20 minutes until crispy.
To make a delish dipping sauce combine three garlic cloves in the food processor with 1/4 cup olive oil and a pinch of red pepper flakes and salt. Pour into a small dish and serve with warm green beans.
